How to:
Step 1:
Fire up the grill and preheat the oven to 325°F.
Step 2:
Pop the whole pumpkin in the oven and let it cook for 45 minutes to an hour, depending on its size.
Step 3:
Meanwhile, grab the skirt steak, sprinkle some salt on it, and throw it on the hot grill, salted side down.
Step 4:
Add a bit more salt, then flip it over. When it’s cooked to your liking, take it off and let it rest for a bit.
Step 5:
For the pumpkin, cut off the top, scoop out the seeds, and add some salt, shredded cheese (any kind you like), and a bit of cream.
Step 6:
Mash all that together with the inside of the pumpkin to make a nice purée of melted cheese and pumpkin.
Step 7:
Slice the skirt steak into small pieces against the grain, and enjoy!
