Winter Solstice Beef Stew

 

 

Ingredients:

- Heart of rump (top sirloin), diced -2 onions, sliced
- 2 potatoes, diced
- 2 carrots, sliced
- 2 can of diced tomatoes
- Water
- 1 bay leaves
- Salt and pepper to taste
- French bread slices, for serving

How to:

Step 1:
In a large pot over medium heat, sear the diced sirloin until browned on all sides.

Step 2:
Add the sliced carrots and onion, stirring occasionally until softened.

Step 3:
Stir in the canned tomatoes along with the bay leaves, salt, and pepper. Let the mixture simmer for a few minutes.

Step 4:
Pour in enough water to cover the ingredients, then add the diced potatoes.

Step 5:
Cover the pot and let it simmer on low heat until the potatoes are tender and the flavors have melded together, about 30-40 minutes.

Step 6:
Serve hot with slices of French bread for dipping.
