Outside Skirt Steak with Tortilla de Patatas

 

 

How to:

Step 1:
Slow-cook the potatoes in oil over low heat. Let them cool in a colander to drain the excess oil.

Step 2:
Season the Argentine outside skirt steaks (entraña) with salt and grill over high heat for 4 minutes on each side, or until cooked to your liking.

Step 3:
Combine the potatoes with 8 eggs without whisking, add salt and pepper. Cook in a hot skillet on one side, then flip it over using a plate and cook the other side.

Step 4:
To check if it's cooking well, give the skillet a few quick shakes; the tortilla should come away easily.

Step 5:
Serve a slice and enjoy with the steak. Enjoy!
